Mango Chicken Curry

I learned the mango chicken curry recipe from my grandmother. I remember how she used to cook it when we visited her place. The aroma of the curry would waft through the entire house and we would wait impatiently sitting right beside her in the kitchen only.

Personally I like to cook this recipe for dinner and side it up with rice. The spoonful bites of rice soaked with the curry is delightful and mouth watering. If you like butter chicken you would surely love this one too.

Expert Tips That I Recommend

  • Make sure the onions turn golden before adding other ingredients as it builds base flavour for the curry.
  • Make sure the mangoes are sweet and fragrant, not soft. It gives rich flavour to the curry without making it overly mushy or watery.
  • If your curry turns too sweet add a squeeze of lemon juice to balance the flavours.
  • If you add mangoes too early it can lose its sweetness. Let the chicken cook halfway first and then add mangoes to it.
  • Let the curry cook on low heat after adding coconut milk so that all the flavours come together nicely.
  • Keep stirring in between so that the curry does not stick to the bottom of the pan or burn.

Recipe Variations For Different Diets

  • Vegetarian Diet: You can replace the chicken with tofu, cottage cheese or even boiled potatoes. You can add different vegetables like carrots, peas, and green beans for extra taste.
  • Low-Carb Diet: Reduce the amount of mangoes and skip if using any added sugar. Use grilled chicken and serve it with steamed vegetables instead of bread or rice.

Storing This Recipe

Refrigeration: You can keep the curry in the fridge for up to 2-3 days. Try to keep it in an airtight container as it locks in the flavours.

Reheating: You need to reheat the leftovers before consuming again. You can heat it gently in a pan and keep stirring until its creamy texture is back. You can add some water or a spoon of coconut milt if it feels too thick.

What To Serve With This Recipe

Personally I love pairing Mango Chicken Curry with Crispy Rice. For those cutting down on carbs, Cauliflower Rice is a great option. Rice is light, fluffy and soaks up the curry flavours nicely.

You can also eat it with different Breads as they help scoop up the curry and are great for dipping. A simple salad with sliced cucumber, onions and squeezed lemon can also add crunch and freshness to your meal.
