Ingredients

  • 8 oz Rotini Pasta
  • ½ Cup Mayonnaise
  • ¼ Cup BBQ Sauce
  • 1 Tablespoon Lime Juice
  • ¼ Tablespoon Salt
  • Tablespoon Black Pepper
  • ¼ Cup Onion.
  • Cup Jalapenos
  • ¼ Cilantro
  • 1 Pint Grape Tomatoes halved or quartered
  • ½ Cup Green Pepper
  • 6 oz Corn.
  • 8 oz Black Beans: You can use chickpeas kidney beans or lentils.
  • 1 Cup Cheddar Cheese: You can use soy or cottage cheese.

Instructions
 

  • Take a bowl, add lemon juice, mayonnaise, BBQ sauce, salt and pepper and mix everything well with the spatula.

  • Cut all the vegetables into small pieces that are chewable. Now add bell peppers, black beans, onions, , corn, jalapeno, cheese, and cilantro, into the the bowl of pasta.
