Note: The ingredients of this recipe will help you make 16 servings (½ cup each).
- 16 ounces Overnight Soaked Dried Pinto Beans: When I don’t have pinto beans, I usually substitute black-eyed peas in this recipe, which still tastes fantastic. However, you can also substitute adzuki or cannellini beans in this recipe.
- 1 tbsp Rice Bran Oil: Chipotle uses rice bran oil to make this recipe, but we can also use olive oil instead as it is readily available in the kitchen.
- 1 tsp Mexican Oregano: You can also substitute Italian oregano or marjoram.
- 1 Medium Yellow Onion Minced: I’ve also tried this recipe with shallots instead of onions, which turned out delicious!
- 2 Cloves Garlic
- 2 Chipotle Peppers + 2 spoons of Adobo Sauce: Instead of fresh, this recipe calls for chipotle peppers soaked in abodo sauce. Although, smoked paprika can be used as a substitute. It has a milder flavor but can be mixed along with cayenne pepper to get the exact taste.

Step 1
Heat oil in a Dutch Oven or a large pot over high-medium heat and add chopped garlic and onion.

Saute the onion and garlic for sometime and then, add Chipotle and adobo sauce.

Then add cumin and oregano.

Once the onions are caramelised, add the pinto beans.

Then, heat the beans over low to medium heat until hot. I stir the beans continuously to prevent them from sticking to the bottom. However, you need to thaw the frozen beans before reheating them.
- Microwave: I prefer reheating cooked beans in the microwave as it is easier. Therefore, I use a microwave-safe dish, cover the beans with a lid, and heat them on high heat at 1-minute intervals, stirring them in between.
