This has led me to experiment with numerous recipes, and I stumbled upon Jamie Oliver’s Roast Potatoes recipe, which left me in awe. The best part I find about this recipe is that it requires very few ingredients and simple cooking techniques. Not many of us know for a fact that there are more than 200 varieties of potatoes sold throughout the United States. 

However, Jamie Oliver specially uses Maris piper potatoes in this recipe. They are a classic and popular potato variety that have been grown in the UK since the 1960s.

They have golden skin and creamy white flesh with a fluffy texture, which makes them versatile all-rounders and the best option for preparing Roast Potatoes. That’s because their high starch level makes them super crispy. So, without further ado, let’s start making this dish delectable for you!

Equipments Required

  • Peeler: I generally use a peeler to peel the potatoes. However, you can also use a sharp knife.
  • Large Pan: A large pan ensures that potatoes are thoroughly soaked in water while getting boiled.
  • Colander: Using a colander helps in removing water from the boiled potatoes and ensures that there is no moisture left behind. However, you can also use a sieve or a strainer.
  • Roasting Tray: I use a metal roasting tray to roast the potatoes. You can also opt for a cast iron skillet if you don’t have an oven.
  • Fish Slicer: I use a fish slicer to cut through the potatoes. However, you can also use a masher.
  • Oven: You will need an oven to roast the potatoes.

How To Make Jamie Oliver Roast Potatoes At Home

  1. Peel the potatoes and keep them whole, ideally about the same size, say 8cm. Put them in a deep pan of boiling salted water for 15 minutes.
  2. Once the potatoes turn tender, drain them in the colander and let them dry for 5 minutes. Then, shake the colander well to chuff up the edges of the potatoes. Place the goose fat or butter in the roasting tray and tip in the potatoes with a fair space between each potato.
  3. Brush the potatoes with 1 tbsp of oil. 
  4. Place unpeeled garlic cloves on the tray. They will add a sweet, caramelized flavor to the potatoes.
  5. Season the potatoes with a pinch of salt.
  6. Add pepper to the potatoes and toss to coat.
  7. Cover the tray and keep it in the fridge overnight or for 7-8 hours.
  8. Preheat the oven to 180°C/350°F/gas 4. Push the roasting tray containing potatoes inside the oven. Let them roast for about 1 hour or until they turn golden.
  9. Remove the tray from the oven and gently half-slice each potato with a fish slicer or a masher so they push into each other and fill the tray.
  10. Pick the sage leaves and toss them with oil. This will ensure that the sage leaves’ flavors are transmitted to the potatoes. Then, sprinkle the sage leaves over the potatoes and roast them again for 20-25 minutes.
  11. Your crispy Roast Potatoes are ready to be relished.
  • Oven temperature matters the most in getting that crispy skin on the outside and a perfectly cooked potato from the inside. Therefore, I always make sure to roast the potatoes on high heat for the best crunch.  
  • While this is optional, I apply this trick as it works like magic. If you want extra crispy skin, add ½ teaspoon of baking soda to the water while boiling the potatoes.
  • After boiling the potatoes, I drain the water well and air-dry the potatoes for a few minutes. This step ensures that the potatoes don’t retain too much moisture.
  • One thing you need to keep in mind is not to open the oven door frequently while the potatoes are roasting. Doing so causes the oven temperature to fluctuate, resulting in improper roasting of the potatoes.
  • The texture of perfectly parboiled potatoes should be tender yet firm, and that can be tested by poking them through a knife or a fork.
  • Lastly, I allow the roasted potatoes to rest for a few minutes after baking. This step ensures that the flavors are perfectly blended and excess moisture is evaporated, giving the potatoes a good texture.

  • Keto-Friendly: Starchy vegetables like potatoes are a definite no for a keto-diet. Therefore, I tried this recipe using red radish with grass-grazed raw butter for my husband who was on keto-diet last year. To my surprise he loved it. You can also use turnips, rutabaga or cauliflower.

Storing And Reheating This Recipe

Storing

  • Refrigerator: I usually store roasted potatoes in an airtight container in the refrigerator. They last for up to four days.
  • Freezer: You can also freeze them by storing them in an airtight container. Roasted potatoes, when frozen, can last up to 4-5 months.

Reheating

  • Oven: You can reheat the roasted potatoes in a preheated oven at 375 – 400 degrees for 10-15 minutes. I usually place them on parchment paper on the baking sheet.
  • Stove: At times I also use a frying pan to reheat roasted potatoes on the stove. I add the potatoes and let them turn hot, which takes about five minutes. I also toss in 1-2 tbsp of butter on top to prevent them from drying out.
  • Air-fryer: You can also reheat the roasted potatoes by air frying them at 360F or 180C for about 3-5 minutes. However, remember to place them in a single layer in the air fryer basket and avoid overcrowding for proper heat circulation.
  • Microwave: Reheating the potatoes in a microwave is the quickest method. It hardly takes 2-3 minutes for the potatoes to be heated up in a microwave. But it is the least preferred method as they turn soggy because of the steam created in the microwave while heating.
